In 2004, the (Ontario) Ministry of Health and Long Term Care announced new rules for handling of raw fish in the Food Premises Regulation (Ontario Regulation 562 made under the Health Protection and Promotion Act, 1990). The new rule required freezing of raw fish because of the concern of parasitic diseases that might be transmitted through its consumption, including sushi products.
